Ingredients
  • 2 1/2 cups all-purpose flour
  • 1 cup cake flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups Cinnamon Toast Crunch cereal, crushed
  • 1 cup white chocolate chips
  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
Instructions
  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together 1 cup softened unsalted butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in 2 teaspoons of vanilla extract.
  4. In a separate bowl, whisk together all-purpose flour, cake flour, baking soda, baking powder, salt, and ground cinnamon.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. Gently fold in the crushed Cinnamon Toast Crunch cereal and white chocolate chips.
  7. Scoop tablespoon-sized balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are golden brown
  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  10. Meanwhile, prepare the cream cheese frosting by beating together 8 ounces softened cream cheese and 1/2 cup softened unsalted butter until smooth.
  11. Gradually add in 3 cups powdered sugar and 1 teaspoon vanilla extract, beating until creamy.
  12. Once the cookies have cooled, spread a generous amount of frosting on each cookie.
  13. Sprinkle additional crushed Cinnamon Toast Crunch cereal on top of the frosting for garnish.
  14. Refrigerate the frosted cookies for at least 30 minutes to set the frosting before serving.
