Ingredients
  • 2 tablespoons unsalted butter
  • 4 large yellow onions, thinly sliced
  • 1 teaspoon sugar
  • 3 cups long grain rice
  • 1 can French onion soup
  • 4 cups beef broth
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 cups shredded Gruyère cheese
Instructions
  1. Melt the butter in a large skillet over medium heat. Add the thinly sliced onions and sugar, and cook, stirring occasionally, until deeply caramelized, about 30 minutes.
  2. Preheat your oven to 350°F (175°C). In a Dutch oven or oven-safe skillet, combine the caramelized onions, uncooked long grain rice, French onion soup, beef broth, dried thyme, salt, and pepper. Stir well to combine.
  3. Cover the Dutch oven or skillet with a tight-fitting lid or aluminum foil. Place it in the preheated oven and bake for 45 minutes, or until the rice is tender and has absorbed most of the liquid.
  4. Remove the dish from the oven and uncover it. Sprinkle the shredded Gruyère cheese evenly over the top, then return it to the oven, uncovered, for an additional 10 minutes, or until the cheese is melted and bubbly.
  5. Let the dish rest for a few minutes before serving to allow the flavors to meld.
