Ingredients
  • 2 cups dried pinto beans
  • 1/4 cup ancho chiles, rehydrated and chopped
  • 4 cloves garlic, minced
  • 1 large onion, finely chopped
  • 2 cans diced tomatoes
  • 1/4 cup brown sugar
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon paprika
  • 2 teaspoons cumin
  • 1 teaspoon oregano
  • 4 cups beef broth
Instructions
  1. Soak the pinto beans overnight or use the quick soak method by boiling them for 5 minutes and letting them sit for an hour.
  2. Drain and rinse the beans thoroughly.
  3. In a large pot, sauté the chopped onion and minced garlic until translucent.
  4. Add the rehydrated ancho chiles, diced tomatoes, brown sugar, and apple cider vinegar to the pot.
  5. Stir in the paprika, cumin, and oregano, allowing the spices to blend with the other ingredients.
  6. Add the soaked pinto beans and beef broth to the pot.
  7. Bring the mixture to a boil, then reduce the heat and let it simmer for 2-3 hours, or until the beans are tender and the flavors have melded together.
  8. Adjust seasoning as needed and serve hot.
