Ingredients
  • 1 lb ground beef
  • 1 can diced tomatoes
  • 1 can black beans, rinsed and drained
  • 1 can kidney beans, rinsed and drained
  • 1 can corn, drained
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 4 cups beef broth
  • 2 tbsp taco seasoning
  • 1 tsp chili powder
  • 1 tsp cumin
  • 2 tbsp olive oil
  • 2 limes juice
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste
Instructions
  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onions and bell peppers, sauté until tender.
  3. If using, add the ground beef and cook until browned.
  4. Stir in the taco seasoning, chili powder, and cumin until evenly distributed.
  5. Add the diced tomatoes, black beans, kidney beans, and corn to the pot.
  6. Pour in the beef broth and bring the mixture to a gentle simmer.
  7. Let the soup cook for 15 minutes, allowing the flavors to meld.
  8. Remove the pot from heat and let the soup cool to room temperature.
  9. Once cooled, transfer the soup to the refrigerator and chill for at least 2 hours.
  10. Before serving, stir in the lime juice and chopped cilantro.
  11. Season with salt and pepper to taste.
  12. Serve the chilled soup with your favorite toppings such as avocado, cheese, and crushed tortilla chips.
